The final blend includes Merlot, with its elegant fruity softness, Cabernet Sauvignon, which gives finesse and aromatic complexity, and Petit Verdot, which contributes to the body and structure with its characteristic spicy notes and vigorous tannins. The final result is a harmonious and balanced red, rich and persistent, aged for a long time in wood, according to Bordeaux traditions._x000D_ _x000D_ The red Madreselva€ shows a decidedly international profile, both for the varieties chosen for the assembly, which for the subsequent process of vinification and refinement. While Merlot was already present in the Agro Pontino, Cabernet Sauvignon and Petit Verdot were introduced on an experimental level towards the mid-80s. The desire to propose a Bordeaux blend with the three varieties was soon born, but modifying the proportions compared to the wines of the Medoc. The Petit Verdot, in fact, reaches excellent levels of maturation in Lazio and becomes part of the blend with the high percentage of 30%, significantly marking the personality and character of the wine. The vinifications take place separately, following the different maturation periods of the three varieties. The fermentations take place in steel tanks at controlled temperature with maceration on the skins. The liquids mature in oak barrels for 18-20 months, then they are assembled for bottling. Before being put on sale, the bottles are refined in the cellar for another 12 months._x000D_ _x000D_ The “Madreselva” wine by Casale del Giglio is an important red wine, to be tasted in combination with braised beef or game dishes.
